- 4 cups baby arugula
- ¼ cup each mint leaves and pomegranate seeds
- 2 cups watermelon cubes
- 1 yellow tomato, chopped
- ½ cup feta cheese, crumbled
For the Lemon Mint Vinaigrette:
- ½ cup extra virgin olive oil
- ¼ cup lemon juice
- 1 tbsp. each honey and lemon zest
- ¼ cup mint leaves, sliced
Begin by making the Lemon Mint Vinaigrette: Simply shake all the ingredients together in a small jar.
Then, toss together the arugula, watermelon, mint, pomegranate, yellow tomato and cheese. Add as much vinaigrette as you like and toss some more.
