Ingredients
  

  • 4 cups baby arugula
  • ¼ cup each mint leaves and pomegranate seeds
  • 2 cups watermelon cubes
  • 1 yellow tomato, chopped
  • ½ cup feta cheese, crumbled

For the Lemon Mint Vinaigrette:

  • ½ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 tbsp. each honey and lemon zest
  • ¼ cup mint leaves, sliced

Instructions
 

  • Begin by making the Lemon Mint Vinaigrette: Simply shake all the ingredients together in a small jar.
  • Then, toss together the arugula, watermelon, mint, pomegranate, yellow tomato and cheese. Add as much vinaigrette as you like and toss some more.
