Berry Biscoff Cheesecake Parfaits
Biscoff cookie crumbs topped with creamy cheesecake filling and fresh raspberries and blueberries.

- 1 cup Lotus Biscoff cookies
- 8 oz. softened cream cheese
- ¼ cup powdered sugar, sifted
- ¼ cup heavy cream
- 1 tsp. vanilla
- ½ cup fresh blueberries
- ½ cup fresh raspberries
Crush the cookies in a food processor or put the cookies in a plastic bag and crush the cookies with a rolling pin.
Divide them between 4 parfait cups.
In an electric mixer, or using a whisk, mix together the cream cheese, sugar, cream, and vanilla. Divide the mixture between the cups, layered on top of the crumbs.
Sprinkle the berries on top of the cheesecake filling.
