Boursin Burgers with Arugula and Tomatoes

- 1 pound ground beef chuck meat
- ¼ tsp. each kosher salt and black pepper
- 1 tbsp. extra virgin olive oil
- 4 Brioche Buns, warmed
- 4 ounces Boursin cheese, sliced
- 1 cup sliced tomatoes
- ½ cup sliced red onions
- 1 cup arugula
- ½ cup cornichons
For the Dijon Mustard Vinaigrette:
- 1 tsp. Dijon mustard
- 2 tsp. white wine vinegar
- 1 tbsp. minced garlic
- 1 tbsp. extra virgin olive oil
- 1 tsp. honey
Begin by making the burgers. Sprinkle the beef with the salt and pepper and form it into four patties.
Heat a cast iron skillet on high heat. Drizzle the skillet with the oil, and cook the burgers to your desired doneness.
While the burgers cook, shake the Dijon Vinaigrette ingredients together in jar. Toss the vinaigrette with the arugula and set aside.
Layer each bun bottom with the arugula, onions, and tomatoes. Then add the burger, and a slice of Boursin. Serve each burger with some cornichons.
