Chocolate Chip Skillet Cookies
Warm and chocolatey, these big cookies baked in individual skillets make a perfect after school snack.

- 1/2 cup old-fashioned oats
- 2 1/4 cups flour (270g)
- 1 1/2 tsp baking soda
- 1/2 tsp. salt
- 1 cup butter, softened (16 tablespoons)
- 3/4 cup dark brown sugar, packed tightly
- 3/4 cup white sugar
- 2 tsp. vanilla
- 1 tsp. fresh lemon juice
- 2 eggs
- 2 cups semisweet chocolate chips
In a food processor, pulse the oatmeal until it is coarsely ground.
Meanwhile, preheat the oven to 350 degrees and grease each pan with butter.
In a small mixing bowl, sift the flour, baking soda, and salt. Stir in the oats.
In a large mixing bowl, cream the butter, sugar, vanilla, and lemon juice. Add the eggs and stir until combined,
Stir the flour mixture into the butter/sugar mixture, until just combined. Stir in the chocolate chips.
Put equal amounts (about 2/3 of a cup) into each skillet. Bake for 15 minutes and serve.
