Chocolate Chip Skillet Cookies

Warm and chocolatey, these big cookies baked in individual skillets make a perfect after school snack.

  • 8 six inch cast iron skillets
  • Food processor

Ingredients
  

  • 1/2 cup old-fashioned oats
  • 2 1/4 cups flour (270g)
  • 1 1/2 tsp baking soda
  • 1/2 tsp. salt
  • 1 cup butter, softened (16 tablespoons)
  • 3/4 cup dark brown sugar, packed tightly
  • 3/4 cup white sugar
  • 2 tsp. vanilla
  • 1 tsp. fresh lemon juice
  • 2 eggs
  • 2 cups semisweet chocolate chips

Instructions
 

  • In a food processor, pulse the oatmeal until it is coarsely ground.
  • Meanwhile, preheat the oven to 350 degrees and grease each pan with butter.
  • In a small mixing bowl, sift the flour, baking soda, and salt. Stir in the oats.
  • In a large mixing bowl, cream the butter, sugar, vanilla, and lemon juice. Add the eggs and stir until combined,
  • Stir the flour mixture into the butter/sugar mixture, until just combined. Stir in the chocolate chips.
  • Put equal amounts (about 2/3 of a cup) into each skillet. Bake for 15 minutes and serve.
