Chorizo and Jalapeno Grilled Cheese Sandwich
Spicy chorizo, roasted peppers, tomatoes, and three cheeses all melted together on buttery bread.

- 4 jalapeno peppers
- ½ pound ground chorizo
- ¼ pound pepper jack cheese
- ¼ pound muenster cheese
- ¼ pound cheddar cheese
- 2 plum tomatoes, sliced
- 8 slices peasant bread
- 4 tbsp. butter
Preheat the oven to 350°. Roast the jalapenos on a baking sheet for 30 minutes. Then, peel the peppers and remove the seeds, and chop them in small pieces.
Meanwhile, in a skillet on medium heat, cook the chorizo, about 7 minutes or until browned and cooked through.
Heat a grill pan or skillet. Build your sandwiches by layering first the cheese, then the meat, and then the vegetables.
Melt half the butter and grill 2 of the sandwiches until the cheese is melted and the bread is browned. Repeat with the rest of the butter and sandwiches.
