For the Apple Compote:
- 4 tbsp. unsalted butter
- 2 tbsp. brown sugar
- 2 apples, peeled and cut in half inch cubes
- ½ tsp. ground cinnamon
For the Oatmeal:
- 4 cups water
- 2 cups old-fashioned oats
- ¼ tsp. kosher salt
- ½ cup goodMix Blend 11, soaked overnight in 3 tbsp. water (optional)
For the Toppings:
- ¼ cup pecans
- 1 apple, thinly sliced
- ½ cup fresh or dried cranberries
- ½ cup vanilla yogurt
- 1 tbsp. honey
Begin by making the Apple Compote: In a three- quart saucepan, melt the butter and brown sugar over low heat. Add the apples and cinnamon and simmer for ten minutes.
At the same time, make the Oatmeal: Bring the water and salt to a boil. Add the oats and simmer for ten minutes. Stir in the Apple Compote, and if you're using the goodMix stir that in too.
Add all the toppings and serve.
