Hudson Valley Pear Salad with Honey Mustard Dressing
Bartlett pears mixed with spring greens, pecans, dried cherries, gorgonzola cheese, bacon, and red onion with a honey mustard dressing.

- 4 slice bacon, cut in one inch pieces
- 4 cups spring greens
- ½ cup extra virgin olive oil
- 3 tbsp. apple cider vinegar
- 2 tbsp. honey
- 1 tsp. Dijon mustard
- 2 sliced pears
- ½ cup sliced red onion
- ½ cup pecan halves
- ½ cup dried cherries
- ½ cup crumbled gorgonzola cheese
On low heat, in a skillet, cook the bacon until it's crisp, and then drain it on a paper towel.
In a small jar, mix together the vinegar, oil, mustard, and honey. That will be your honey mustard dressing.
Toss the spring greens with the dressing, and then layer the rest of the ingredients on top.
