Minty Melon Mixed Salad
Arugula tossed with goat cheese, carrots, pistachios, honeydew, and cantaloupe. Tossed with a Lemon Mint Vinaigrette.

- 4 cups baby arugula
- ¼ cup each mint leaves and pistachio nuts
- 2 cups cantaloupe and honeydew cubes
- 1 carrot, julienned
- ½ cup goat cheese, crumbled
For the Lemon Mint Vinaigrette:
- ½ cup extra virgin olive oil
- ¼ cup lemon juice
- 1 tbsp. each honey and lemon zest
- ¼ cup mint leaves, sliced
Begin by making the Lemon Mint Vinaigrette: Simply shake all the ingredients together in a small jar.
Then, toss together the arugula, melons, mint, carrot, pistachios, and goat cheese. Add as much vinaigrette as you like and toss some more.
