Pork Medallions with Basil and Peppers

- 1 lb. pork tenderloin, cut in half inch slices
- 3 tbsp. oyster sauce
- 3 tbsp. light soy sauce
- 2 tbsp. extra virgin olive oil
- 1 cup sliced mini peppers
- 1 minced jalapeno
- 3 tbsp. minced garlic
- 2 cups basil leaves
- 1 tbsp. sesame seeds
- ¼ tsp. red pepper flakes
In a small bowl stir together the soy sauce and oyster sauce. Marinate the pork in there while you cook the vegetables.
Heat a cast iron skillet to medium heat with one tablespoon of the oil, and cook the peppers until they're softened. Then add the garlic, jalapeno, and basil and cook two minutes. Remove everything from the pan to a plate. Cover and keep warm.
Heat the rest of the oil, and cook the pork, in a single layer, for about four minutes per side, until an internal temperature of 145 degrees.
Serve the pork with the reserved vegetables and noodles or rice. Garnish with the sesame seeds and red pepper flakes.
