- 1 cup all purpose flour (120g)
- 1 tbsp. baking powder
- ¼ tsp. salt
- 1 tbsp. granulated sugar
- 1 large egg
- 1 small banana, mashed
- 1 cup whole milk
- ¼ cup plain, full fat Greek yogurt
- 1 tsp. vanilla extract
- 2 tbsp. melted butter
- 1 cup semi sweet chocolate chips
- ½ cup finely chopped walnuts
- 2 tbsp. butter for greasing the pan
- ½ cup maple syrup
- 1 sliced banana
Sift together the flour, baking powder, salt, and sugar into a large mixing bowl.
In a second, smaller bowl, beat together the egg, mashed banana, vanilla, yogurt, and milk. Then stir this into the flour mixture, until just combined. Stir in the melted butter, and then a half cup of the chocolate chips and all the walnuts.
Heat a nonstick griddle or skillet, and melt a teaspoon of butter. Depending on what size you want your pancakes, ladle the correct amount of batter onto the skillet. When bubbles appear ,flip your pancakes. Add more butter, each time you add more pancakes to the skillet.
Top pancakes with chocolate chips, sliced bananas, and maple syrup.
