Vanilla Chocolate Chunk Scones with Vanilla Glaze

Vanilla Chocolate Chunk Scones with Vanilla Glaze are filled with vanilla flavor and warm chocolate chunks. They are the perfect for breakfast, tea time, or an after school snack. While they’re festive enough to serve at a holiday brunch, they’re also easy enough to serve any day of the week.

The Equipment You’ll Need

  • A Pastry Cutter- You’ll need this to cut the butter into the flour. You could use a food processor for this step, but I find I overmix things that way. You could also use two knives or your fingers to do this.
  • A Baking Sheet- This is for baking your scones. You’ll need to line it with parchment paper.
  • A Piping Bag- This is for applying the glaze to your scones. But, you can also apply the glaze with a spoon or you could put the glaze in a plastic bag, and cut off the corner to squeeze the glaze out of.
  • A Food Scale- I always weigh my flour and sugar when I’m baking. Doing that insures your baked goods will turn out perfectly every time.

The Ingredients You’ll Need for Vanilla Chocolate Chunk Scones with Vanilla Glaze

  • All Purpose Flour- Use all purpose flour for this recipe.
  • Butter- You’ll need cold, unsalted butter for these scones.
  • Chocolate- I used Lake Champlain 57 percent Dark Chocolate for my chunks. But, you could use milk chocolate or chocolate chips.
  • Coarse Sugar- I used Sugar in the Raw turbinado sugar to sprinkle on the top of my scones. Feel free to use regular sugar.

How I Made my Scones

  • First, I made sure to sift together all my dry ingredients. When I skip this step, my kids complain they can taste the baking powder.
  • Next, I made sure to cut my butter evenly into all the dry ingredients.
  • Then, I was careful to not overmix the wet ingredients into the butter and dry ingredients. Overmixing creates tough scones.
  • Next, I floured my knife to cut the scone dough and then carefully moved them to the baking sheet.
  • Then, I just lightly brushed them with cream.
  • Finally, I sifted my powdered sugar to avoid a lumpy glaze and then I decorated my scones.

One of the things I love about these Vanilla Chocolate Scones with Vanilla Glaze is that they are so inexpensive to make. As long as you already have some basic baking supplies, you won’t have to spend any extra money to make these very delicious treats.

Ingredients
  

  • cups all purpose flour (270g)
  • 2 tsp. baking powder
  • ¼ cup sugar (50g)
  • ½ tsp. salt
  • 6 tbsp. cold unsalted butter, cut in half inch cubes
  • 2 egg yolks
  • ½ cup heavy cream
  • ¼ cup whole milk
  • 1 tsp. vanilla extract
  • 3 ounces chocolate, cut in quarter inch pieces
  • 2 tbsp. sanding sugar

For the Vanilla Glaze:

  • 1 cup powdered sugar, sifted
  • ½ tsp. vanilla extract
  • 3 tbsp. heavy cream

Instructions
 

  • Preheat the oven to 400 degrees.
  • Sift together the flour, baking powder, sugar, and salt into a large mixing bowl.
  • Using a pastry cutter, cut the butter into the flour mixture, until it all resembles small peas.
  • In a small bowl, mix together the yolks, milk, cream, and vanilla. Stir it into the flour mixture just until no streaks of flour are left. Stir in the chocolate chunks.
  • Dump the mixture onto a floured board, and pat it into a one inch thick circle. Using a floured knife, cut it into 8 wedges. Place them on a parchment lined baking sheet, spaced two inches apart from one another.
  • Brush each wedge lightly with some heavy cream and sprinkle with the coarse sugar. Bake them for twenty minutes, or until they're light brown.
  • Make the glaze by combining the sifted powdered sugar with the vanilla and heavy cream. Use a piping bag to apply the glaze to the scones. Serve warm.
