Cranberry White Chocolate Scones
Cranberry White Chocolate Scones are my new favorite flavor of scones. Sometimes, I find cranberries to be too tart. But, in theses scones, the cranberries are a burst of fresh flavor, that are sweetened by the sweet scone dough. Also, sometimes I find white chocolate overly sweet. But, in these scones, the tartness of the cranberries lessens the sweetness of the white chocolate. Another thing I love about these scones, is that they mix up in 15 minutes. And, they bake in just twenty minutes.
The Equipment Needed
- A Food Scale- I feel a food scale is essential for correctly measuring the flour for this recipe.
- Sifter- Use a sifter to sift all the dry ingredients for this recipe.
- Pastry Cutter- This is for cutting the butter into the dry ingredients.
- Pastry Bag- This is not essential, but helps me glaze these scones.
The Ingredients Needed for Cranberry White Chocolate Scones
- Flour- Be sure to use all purpose flour.
- White Chocolate Chips- I like the Ghiradelli chips.
- Cranberries-Frozen cranberries work well in this recipe. They don’t bleed their color like fresh ones tend to do.
- Orange Zest- Use the small holes of a grater to zest one orange.
How I Made My Scones
- First, I carefully measured all my ingredients. I made sure to weigh my flour and sugar.
- Next, I used the pastry cutter to cut the butter into the dry ingredients. It’s important to only cut the butter in until their our pea sized pieces of dough.
- Then, I stirred the wet ingredients into the mixture. Once this happens it’s important to bake the scones as soon as possible. Waiting causes the baking powder to lose it’s oomph.
- Next, I emptied the dough onto a floured board and shaped it into a one inch high circle.
- Next, I cut the scones into wedges and baked them off.
- Finally, I made the orange glaze and drizzled it on.
These Cranberry White Chocolate Scones are the perfect winter breakfast or tea time snack. Warning: They are so good, you will not be able to stop eating them.
Cranberry White Chocolate Scones
Cranberry scones with white chocolate chips and fresh cranberries, and orange glaze.
Ingredients
- 2¼ cups all purpose flour (270g)
- 2 tsp. baking powder
- ¼ cup sugar (50g)
- ½ tsp. salt
- 6 tbsp. cold unsalted butter, cut into half inch cubes
- 2 egg yolks
- ½ cup heavy cream
- ¼ cup whole milk
- 1 tsp. vanilla extract
- zest from one orange
- ½ cup white chocolate chips
- ¾ cup frozen cranberries, cut in half
- 1 tsp. coarse sugar
For the Orange Glaze:
- 1 cup powdered sugar, sifted
- 2 tbsp. heavy cream
- 1 tbsp. fresh orange juice
Instructions
- Preheat the oven to 400 degrees, and cover a baking sheet with parchment paper.
- Sift together the flour, baking powder, sugar, and salt into a large mixing bowl.
- Using a pastry cutter, cut the butter into the flour mixture, until it all resembles small peas.
- In a small bowl, mix together the yolks, milk, cream, vanilla, and orange zest. Stir it into the flour mixture just until no streaks of flour are left. Stir in the cranberries and white chocolate chips.
- Dump the mixture onto a floured board, and pat it into a one inch thick circle. Using a floured knife, cut it into eight wedges. Place them on the baking sheet, spaced two inches apart.
- Brush each wedge lightly with some heavy cream and sprinkle with coarse sugar. Bake them for twenty minutes, or until they're light brown.
- Make the glaze by combining all the ingredients. Use a piping bag to apply the glaze to the scones. Serve warm.
