Apple Pie Cookie Bars with Cinnamon and Walnuts

Apple Pie Cookie Bars with Cinnamon and Walnuts are one of our favorite bar cookies. If you love apple pie, these are the cookies for you. And, with less than an hour of hands on time, these cookies are a timesaver. I start these cookies by blending the cookie crust. Since the crust uses melted butter, there is no butter to soften. Then, I top the crust with tender apples, cooked in butter and brown sugar. To the apples, I also add cinnamon and freshly grated nutmeg. These bars can be eaten just as they are, or you can serve them with ice cream. All in all, these bars are absolutely delicous.

The Equipment I Used

  • A Wooden Spoon- No mixer is required for this easy recipe. I use just a spoon to stir up the crust.
  • A Food Scale- For a perfect crust, I recommend weighing your flour and sugar.
  • A Sifter- Use a sifter to sift together your dry ingredients.
  • A 13 by 9 Cake Pan- I used a nonstick cake pan to bake my bars in.
  • Apples- I used Granny Smith apples, but you can use any baking apples you like.
  • Flour- Use all purpose flour.
  • Nutmeg- I prefer freshly grated nutmeg.
  • Brown Sugar- I used dark brown sugar.
  • Flour- Use all purpose flour.

How I Made my Cookies

  • First, I made sure to line my pan with buttered parchment paper. I wanted to make sure the cookies would be easy to remove.
  • Next, I made the cookie crust and pressed it into the bottom of the pan. It’s important to make sure the crust is even throughout the pan.
  • Then, I made the apple filling. It’s important to make sure your apples don’t burn.
  • Next, I placed the apples on the crust, and then rolled out some cookie cut outs to top the pie.
  • Finally, I baked the cookies and cooled them.

My family loves these Apple Pie Cookie Bars with Cinnamon and Walnuts. And, needless to say, these cookies made the house smell terrific.

Ingredients
  

  • cups all purpose flour (320g)
  • ½ cup granulated sugar (100g)
  • ¼ tsp. salt
  • 16 tbsp. melted butter
  • 1 beaten egg
  • 1 tsp. vanilla extract
  • ½ cup chopped walnuts

For the Apple Filling:

  • 3 tbsp. unsalted butter
  • ¼ cup packed dark brown sugar
  • 5 cups Granny Smith apples, peeled, cored, and chopped in half inch pieces
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg

Instructions
 

  • Line a 13 by 9 inch nonstick baking dish with parchment paper. Make sure the paper hangs over by two inches on all sides. Brush the paper with melted butter. Preheat the oven to 350 degrees.
  • In a mixing bowl sift together the flour, sugar, and salt. Stir in the butter, egg, and vanilla. Stir until a dough is formed. Remove a third of the dough and wrap it in plastic wrap and chill it. Press the rest of the dough evenly into the bottom of the pan. Cover the pan with plastic wrap and refrigerate while you make the apple filling.
  • For the Apple Filling: Melt the butter and sugar in a large skillet on medium heat. Add the apples, cinnamon , and nutmeg and cook, stirring occasionally, until the apples are tender and most of the liquid has evaporated. Take care not to burn the apples. This will take about twenty minutes.
  • Spread the apples evenly over the crust. Sprinkle on the walnuts.
  • On a floured board, roll out the rest of the dough and use a cookie cutter to cut out shapes. Place them all over the top of the bars. Bake for 40 minutes, and then cool on a wire rack. Cut into bars and serve.
