Chocolate Peanut Trail Mix Cookies

Chocolate Peanut Trail Mix Cookies are filled with peanuts, pretzels, and chocolate covered candies. I start these cookies by making my favorite chocolate chip cookie dough. Then, I stir in the pretzels, nuts, and candies. Finally, I chill the dough and then bake the cookies off. I promise, every bite of these cookies is filled with delicious crunchy goodies.

The Equipment Needed

  • A Food Processor- I use my food processor to grind the oats.
  • A Food Scale- For perfect baking results, be sure and weigh your flour and sugar. And, weigh each ball of dough to ensure uniformly sized cookies that will cook evenly.
  • A Sifter- Sift together your flour, baking soda, and salt.
  • An Electric Mixer- While not essential, an electric mixer makes mixing up the dough much easier.
  • Baking Sheets- Use shiny and heavy baking sheets. I don’t like non stick sheets. Instead, I use parchment paper.

The Ingredients Needed for Chocolate Peanut Trail Mix Cookies

  • Oats- Oats add great texture to these cookies. Use old fashioned, not quick cooking oats.
  • Flour- Be sure and use all purpose flour.
  • Butter- Use unsalted butter, and make sure it’s softened. I like to slice my butter into thin slices so that it softens quickly.
  • Lemon Juice- Be sure and to use fresh lemon juice.
  • Pretzels- I use mini pretzel twists, but you can use any thin pretzel. Just be sure to break them into one inch pieces.
  • Chocolate Coated Candies- a.k.a. m&ms- I used plain, peanut, and peanut butter ones.
  • Raisins- Technically, trail mix should have raisins in them, but since some of my people are raisin haters, I didn’t use any.

How I Made my Cookies

  • First, I let my butter set out on the counter for a couple of hours.
  • Next, I carefully weighed and measured all my ingredients.
  • Then, I mixed the dough and weighed out 24 balls of it. Except, this time I forgot to do this, which is why, my cookies are all different sizes.
  • Finally, I baked my cookies. To make perfectly round cookies, I did pull out the cookie sheets and used a spoon to nudge the batter into perfect circles.

Ingredients
  

  • ½ cup old-fashioned oats
  • cups all purpose flour (315g)
  • tsp. baking soda
  • ½ tsp. salt
  • 1 cup softened butter
  • ¾ cup packed brown sugar
  • ¾ cup granulated sugar (150g)
  • 2 large eggs
  • 1 tsp. fresh lemon juice
  • 2 tsp. vanilla extract
  • 1 cup mini pretzel twists
  • 1 cup peanuts
  • 1 cup candy covered chocolates: plain, peanut, peanut butter

Instructions
 

  • In a food processor, grind the oats, but don't pulverize them.
  • Place the oats in a bowl, and then sift in the flour, baking soda, and salt.
  • In the bowl of an electric mixer, cream the butter and sugars together until they're just blended. Add the eggs, vanilla, and lemon juice. Just mix until everything is blended.
  • Next, add the oats and flour mixture, and just mix until no streaks of flour remain. Now add the peanuts, pretzels, and candy covered chocolates.
  • Chill the dough for one hour in the refrigerator. Line two baking sheets with parchment paper.
  • Preheat the oven to 350 degrees.
  • Then, form the dough into 24 balls. Each ball should contain a quarter cup of dough, or weigh 60 grams.
  • Bake the cookies on the two middle racks, with six cookies per pan. Bake for 15 to 17 minutes, until the cookies are brown on the edges and the middles are set. Cool on a wire rack. Then, let the sheets cool completely and bake the next 12 minutes.
