Grilled Artichokes with Roasted Garlic Aioli
These Grilled Artichokes are a simple and healthy appetizer or side dish, and a great addition to any May meal. If you’re a garlic lover you must make the Roasted Garlic Aioli to dip your leaves in.
This dish is really very simple to make. If you have never cooked with artichokes before, just know they are easy to trim, especially if you use kitchen shears. If you don’t own a steamer basket, just simmer them in about an inch of water. After steaming the artichokes they are really ready to eat, but rubbing them with olive oil and grilling them adds an extra layer of flavor.
Grilled Artichokes with Roasted Garlic Aioli
Tender artichokes with a rich and creamy garlic dipping sauce.

- Food processor
Ingredients
- 4 artichokes
- 6 large cloves of garlic
- 4 tbsp. extra virgin olive oil
- ¼ tsp. black pepper
- 1 tsp. lemon juice
- ¼ cup mayonnaise
Instructions
- For the Grilled Artichokes:
- Trim the artichokes for eating by cutting off the ends of the stalks and the sharp tips of the leaves.
- Boil one inch of water in a large pot with a steamer insert. Add the artichokes to the pot, put the lid on, and steam for 40 minutes, or until a leaf can be easily removed.
- Cut the artichokes in half, vertically, and remove the choke. Season with salt and pepper.
- Brush with olive oil and sear on both sides on a hot grill pan or large skillet.
For the Roasted Garlic Aioli:
- Preheat your oven to 400°.
- In a small ceramic ramekin, place 2 tablespoons of olive oil and the garlic. Cover tightly and bake for one hour.
- When the garlic is tender, add it to a food processor, with the mayonnaise, pepper, and lemon juice. Chop it all up, and with the motor running drizzle in 1 tablespoon of olive oil.
