Irish Cheddar Lobster Chowder with Potatoes

Irish Cheddar Lobster Chowder with Potatoes is one of my favorite dishes to make for St. Patrick’s Day. Filled with Irish butter and Irish cheddar, this chowder is perfect for this festive holiday. To start, I melt some Irish butter and cook leeks, carrots, and celery until they’re nice and tender. Next, I add lots of red potatoes and my homemade chicken stock. Finally, I add some heavy cream, Irish cheddar, and big chunks of lobster. All together, these ingredients create the most delicious soup imaginable.

The Equipment I Used

  • A Dutch Oven- I used my four quart Staub Dutch oven to make this chowder.
  • That’s It- This is a one pot meal.

The Ingredients Needed for Irish Cheddar Lobster Chowder with Potatoes

  • Butter- I used Kerrygold Irish salted butter. It adds such great flavor to this soup. But, you can use any butter that you like. If you use unsalted butter, you will need to add a quarter of a teaspoon of kosher salt to your veggies.
  • Leeks- You could also use onions. Be sure and soak your chopped leeks in water, to make sure all the dirt comes out.
  • Carrots- I really prefer organic carrots. I feel like they have less pesticide taste. Be sure and dice your carrots in small pieces so they cook easily.
  • Celery- Again, be sure and dice your celery fine enough so that it cooks well.
  • Red Potatoes- You could also use russet or Yukon Gold potatoes.
  • Chicken Stock- I always use my homemade chicken stock. The recipe is below.
  • Cream- Be sure and use heavy cream, for a nice and thick soup.
  • Irish Cheddar- I used Kerrygold Reserve Cheddar. But, you can use any extra sharp cheddar that you like.
  • Lobster- Buy precooked lobster at your best fish market, or steam your own.
  • Chives- You could also use scallions.

How I Made my Chowder

  • First, I cooked my vegetables. You want them to be softened but not mushy.
  • Next, I added the stock and potatoes, and cooked them, too.
  • Finally, I added the lobster and cream and served my soup.

Irish Cheddar Lobster Chowder with Potatoes

Ingredients
  

  • 2 tbsp. salted butter
  • 1 cup each chopped leeks and diced carrots
  • ½ cup chopped celery
  • 1 tbsp. minced garlic
  • 2 cups red potatoes, peeled and diced
  • cups chicken stock
  • 1 cup heavy cream
  • ½ cup Irish cheddar cheese
  • 2 cups cooked lobster, cut in bite sized pieces
  • 2 tbsp. chopped chives

Instructions
 

  • In a Dutch oven, melt the butter. Add the leeks, carrots, and celery and cook on low heat for ten minutes. Add the garlic and cook for one minute.
  • Add the chicken stock and potatoes. Cover and simmer for twenty minutes.
  • Add the cream and bring it to a simmer. Then add the lobster and cheese and cook for a couple of minutes, just to warm up the lobster. Serve topped with the chives.

Chicken Stock

Homemade chicken stock

Ingredients
  

  • lbs. chicken breasts and wings with skin and bones
  • 10 cups water
  • 2 peeled onions
  • 2 peeled carrots
  • 3 peeled parsley roots
  • 1 tbsp. kosher salt
  • 4 stalks celery
  • 1 peeled parsnip
  • 2 tbsp. garlic cloves
  • 1 cup fresh parsley and fresh dill

Instructions
 

  • Put the chicken and the salt in a large, tall pot and cover with ten cups of cold water. Bring to a boil and then simmer for 30 minutes, skimming any scum that forms.
  • Add all the vegetables and herbs and simmer for two and a half hours. Pour the soup through a strainer to remove everything but the broth.
