I was inspired to make Chicken and Waffles with Sriracha Honey Sauce, after a visit to the Grand Floridian Hotel, the flagship resort at World Disney World in Orlando, Florida. While there we dined a couple of times at their Grand Floridian Cafe, and saw a lot of diners eating chicken and waffles. We never had a chance to order it, but I’ve been thinking about their rendition of chicken and waffles, which includes a sriracha honey sauce.
The Equipment You’ll Need
A deep fry thermometer- This is very important. I actually forgot to use mine for a little while tonight, and since the oil wasn’t hot enough, my chicken turned out pale and pasty -looking. But, then, I used the thermometer, and my chicken came out a beautiful golden brown.
A cast iron skillet- This really does the best job of frying chicken. If you don’t have one, use another large, heavy skillet.
A waffle iron- You can’t make waffles with out this!
The Ingredients You’ll Need for Chicken and Waffles with Sriracha Honey Sauce
The Flour- This waffle recipe uses all purpose flour. I highly recommend using a food scale to weigh your flour, for the exact 248 grams. I find cup measures far too inaccurate for making waffles.
The Baking Powder- I very much recommend sifting your dry ingredients together. Large clumps of baking powder will give your waffles a bitter taste.
Whole Milk and Full Fat Sour Cream- For crisp waffles, you need the full fat products.
The Sriracha- My husband loved this in the Sriracha Honey Sauce, but I preferred my sauce without the sriracha.
How I Made It
Although this recipe has a few different components, it was fairly easy to make.
First, I made the Sriracha Honey Sauce. I then heated it up right before serving. I also fried my bacon and chopped it up.
Next, I made the waffle batter, and got the flour and buttermilk bowls ready for the chicken.
Then, I heated up the waffle iron and the cast iron skillet with the oil. While the oil heated, I sliced and dipped my chicken.
Finally, I fried chicken and made waffles at the same time. I kept some of the chicken warm in a 250 degree oven, while the rest finished frying.
I served this dish with steamed golden beets with some of the Sriracha Honey Sauce drizzled on top.
One of the things I love about a Disney vacation is how fun and imaginative the food is. However, many of their dishes suffer from poor ingredient quality and poor execution. While I did not try the chicken and waffles there, I ate plenty of chewy, and just plain poor quality chicken, while there. At home, however, I have total control over the chicken I buy, and I can really take my time preparing it. So, if you want to make a dinner with a little bit of Disney magic, do try these Chicken and Waffles with Sriracha Honey Sauce.

Chicken and Waffles with Sriracha Honey Sauce
Sour cream and bacon waffles topped with boneless fried chicken and bacon and drizzled with sriracha honey sauce.
Cut each breast vertically into long strips about a half inch thick. Season the strips with salt and pepper.
Prepare 3 bowls for dipping the chicken. Divide the flour and spices between 2 bowls and place the buttermilk in the third bowl.
Heat a cast iron skillet filled with one inch of oil to 350 degrees. Dip each strip in the flour, then the buttermilk, and then into the second bowl of flour. Fry each piece until golden brown on both sides. Drain the chicken on a wire rack.
For the Bacon Waffles:
Cook the bacon in a skillet until it's done, and then chop each slice into half inch pieces. Set aside half to sprinkle on the finished plates.
Sift the flour, baking powder, sugar, and salt together.
In a large mixing bowl, beat the eggs, and then stir in the milk and sour cream. Add the flour mixture, stirring just until no streaks of flour remain. Try not to overmix. Stir in the butter and bacon.
Cook the batter in your waffle iron, according to the manufacturer's directions.
For the Sriracha Honey Sauce:
Stir everything together and warm up right before serving.
To Serve:
Top the waffle with the chicken, bacon, and Sriracha Honey Sauce.

Lobster Salad with Tarragon and Chives is the quintessential summer dish for many New Englanders. To me, nothing is more evocative of a day spent by the sea, than this sumptuous mixture of lobster, mayonnaise, and herbs. Once this salad is made it can be served on a simple bed of lettuce, or on a fresh roll, or with bacon, lettuce, and tomato on toasted brioche.
The Equipment You’ll Need
A Very Large Pot- You’ll need this to steam all 4 lobsters at once. If you only have a large pot, you should steam your lobsters in 2 batches.
Lobster or nut crackers- You’ll need these to crack open the shells.
Kitchen Scissors- These are handy for cutting the herbs. You can also use these to cut open the shells.
The Ingredients Needed for Lobster Salad with Tarragon and Chives
The Lobsters- Nothing can beat the taste of freshly caught lobster. No lobster I can purchase near my home, an hour from the ocean, can match the taste of a lobster just caught on the shores of Maine. But, any lobster I can steam at home, is better than many restaurant lobsters. Home steamed lobsters are far superior to frozen lobster tails or a lobster that was steamed days ago.
The Mayonnaise- I always use Hellaman’s.
The Herbs- I think tarragon and chives complement lobster, better than any other herbs.
How I Made It
A few hours before lunch, and right after I bought the lobsters, I steamed them.
Next, I took all the meat out of the shells. I saved the shells to make lobster stock, which I later made into lobster risotto, and lobster bisque.
Then, I mixed all the salad ingredients together, and chilled them for two hours.
Finally, I made Lobster BLTs with the salad. I toasted some brioche, and added bacon, ripe tomato slices, and Boston lettuce.
When dining at seaside restaurants, I always order lobster salad, but am often disappointed. Most recently, just last month in fact, at a restaurant in New Hope, Pennsylvania, I saw what looked like delicious lobster salads, being delivered to the nearby tables. And, yes, I know New Hope is hours from the ocean, and most definitely not known for their lobster, but I still had hopes that the lobster salad would be at least good, but it wasn’t. My New Hope lobster salad was warm, and warm is not what you want in a lobster salad. So, please try and make some lobster salad of your own. Even if it’s your first time steaming lobster, I’m positive you can top a lukewarm, skimpy with the lobster, New Hope lobster salad.

Chicken Fajitas with Queso Fundido is a fun and tasty twist on classic chicken fajitas. I made these for dinner last night, and they were a big hit with the family. The queso fundido sauce is nice change from guacamole, which is what we usually top our fajitas with. And, it makes a great dip for broccoli and other vegetables. Although this dish has a lot of ingredients, it can be made in under an hour.
The Ingredients You’ll Need
The Vegetables- I used red, orange, and yellow peppers, and a red onion last night. But, you can use any combination of peppers and onions you want.
The Spices- I used onion powder, garlic powder, cumin, paprika, oregano, and chili powder to spice up my chicken. But, if you don’t like that many spices, just tone them down.
The Cheeses- I used pepper jack and sharp cheddar. But, you could also use all cheddar. I used pepper jack that had been in my freezer, and it made the sauce a tad grainy, but it was so minor that I don’t think anyone else noticed. It was an expensive pepper jack cheese from the gourmet department, so I was really glad I was able to use it up.
The Evaporated Milk- You can find this in cans in the baking aisle of your supermarket.
The Cilantro- This gives the whole dish a really nice bright flavor.
The Equipment You’ll Need for Chicken Fajitas with Queso Fundido
A grill pan- I like to grill my chicken on a grill pan, but you could use any skillet to do this.
A cast iron skillet- I like to grill my tortillas on a grill pan. However, last night I was feeling pressed for time, so I simply put the tortillas in the microwave, wrapped in a damp paper towel, and microwaved the tortillas for a minute. But, my husband far prefers the tortillas when I grill them with butter.
A large skillet- I use this for frying the peppers and onions.
A 3 quart saucepan- I use this to make the queso fundido sauce.
How I Made the Fajitas
Although this is a quick and easy dish, I do find it a struggle to juggle all the various pots and pans needed to get this dish on the table. But, with a good strategy it can easily be done.
I start by cooking the peppers and onion, since they can easily be warmed up in the microwave right before serving.
Then, I make the queso fundido sauce, because that, too, can easily be reheated right in the pot or the microwave.
Next, I grill my tortillas, stack them on a plate, and cover them with foil to keep them warm.
Last of all, I grill the chicken breasts, because they tend to get dry when reheated.
I also made some steamed broccoli to serve with this meal.
These Chicken Fajitas with Queso Fundido are a classic Bretti family dinner entree. I love that they are inexpensive to make, and also that they reheat well the next day for lunch. Why go to a restaurant and order fajitas, when they are so easy to make at home? For a fun theme night, play some Mexican music, and set the table with colorful ceramic dishes. Also, make a fun drink, like margaritas, and maybe a Mexican dessert. We love fried ice cream at my house. Whether you do a complete theme night, or serve your fajitas solo, I hope you’ll try this innovative take on traditional chicken fajitas.
