Strawberry and Roasted Chicken Salad

Strawberry and Roasted Chicken Salad is one of our favorite springtime salads. I start this dish by roasting some zesty orange and garlic chicken breasts. Then, I make a tasty Orange Vinaigrette. Finally, I toss this all together with spring greens, strawberries, oranges, walnuts, and goat cheese. We like this salad for several reasons. First of all, I like that I can make all the components in advance. Secondly, I like that this is a complete meal. Usually, I just serve this salad with some bread. No other side dishes are needed. And, lastly, we all love the fresh and delicious flavors in this salad.

The Equipment I Used

  • A Salad Spinner- Use this to get your greens nice and dry. That way, all the dressing will cling to the leaves.
  • A Small Jar- I used this to shake up the vinaigrette.

The Ingredients Needed for Strawberry and Roasted Chicken Salad

  • Spring Greens- Be sure to wash and dry them well.
  • Oranges- Use a naval orange. Remove the peel and pith.
  • Strawberries- I prefer organic strawberries. Be sure to wash them well.
  • Walnuts- Diamond walnuts are the brand I always buy.
  • Goat Cheese- I store mine in the freezer. That way it doesn’t go bad. It defrosts very quickly.
  • Vinegar- I used a lemon balsamic vinegar. But you could also use white balsamic vinegar.
  • Honey- Orange Blossom honey would be perfect for this vinaigrette.
  • Chicken- Use boneless, skinless chicken breasts. I always use Bell and Evans chicken because I find they are the most tender.
  • Oil- Be sure to use a good, mild extra virgin olive oil.

How I Made my Salad

  • First, I roasted my chicken. You’ll need to check your chicken to make sure it’s fully cooked.
  • Next, I made the Orange Vinaigrette. Taste your vinaigrette. You may need to add extra honey.
  • Finally, I tossed everything together.

Ingredients
  

For the Vegetables:

  • 1 naval orange, peeled and sliced
  • ½ cup goat cheese, crumbled
  • 1 cup halved strawberries
  • ¼ cup chopped walnuts
  • 4 cups spring greens
  • 1 tbsp. orange zest

For the Orange Vinaigrette:

  • ½ cup extra virgin olive oil
  • 2 tbsp. fresh orange juice
  • 1 tsp. orange zest
  • 1 tbsp. lemon balsamic or white balsamic vinegar
  • 1 tsp. honey
  • ¼ tsp. each kosher salt and black pepper

For the Roasted Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp. each extra virgin olive oil and unsalted butter
  • 2 cloves minced garlic
  • ½ tsp. each ground cumin and oregano
  • ¼ tsp. each kosher salt and black pepper
  • 2 tbsp. fresh orange juice

Instructions
 

  • Begin by roasting the chicken: Preheat the oven to 450 degrees. Place the breasts in a small baking dish and top it with the rest of the ingredients. Bake for 20 minutes or until the chicken is no longer pink in the middle. Slice the chicken and set aside.
  • While the chicken is baking, mix together all the Vegetable ingredients.
  • Also, make the Orange Vinaigrette: Simply shake all the ingredients together in a small jar.
  • Toss the chicken with the vegetables. Add as much dressing as you like.
