Apple Cobbler with Almond Biscuits

Apple Cobbler with Almond Biscuits is a great fall and winter dessert. I make my cobbler by filling mini skillets with cinnamon, apples, and brown sugar. Then, I make mini biscuits, that I top with sliced almonds. The biscuits bake right on top of the apples, and absorb some of that delicious apple flavor. Finally, the apple cobber is topped with sweet vanilla ice cream. All in all, this is a fantastic dessert. Although, we’ve been known to eat it for breakfast as well.

The Equipment I Used

  • Cast Iron Skillets- I used four and a half inch mini cast iron skillet. But, you could use any small baking dishes.
  • A Food Scale- Set yourself up for success by weighing your flour.
  • A Sifter- Sift together your dry ingredients.
  • A Pastry Cutter- Use this to cut the butter into the dry ingredients.
  • A Biscuit Cutter- I used a two inch biscuit cutter.

The Ingredients You’ll Need for Apple Cobbler with Almond Biscuits

  • Apples- I used green apples, but use whatever baking apples you like.
  • Turbinado Sugar- I like the Sugar in the Raw brand.
  • Cream- Be sure and use heavy cream for this recipe.
  • Vanilla Ice Cream- You could also use a caramel ice cream.

How I Made my Cobbler

  • First, I mixed the apples, sugar, and cinnamon together.
  • Next, I made the biscuits. It’s very important to use cold butter, and cut it into the flour until the flour forms into large crumb sized clumps. Then, just gently stir in the cream, until a dough forms. If you overwork your dough, your biscuits will be tough.
  • Then, I used my biscuit cutter to cut out my mini biscuits.
  • Next, I topped the apples with the biscuits and baked them for twenty minutes.
  • Finally, I topped the cobblers with vanilla ice cream.

Apple Cobbler with Almond Biscuits

Equipment

  • 4½ inch cast iron skillets or other small baking dishes

Ingredients
  

  • 4 tsp. unsalted butter
  • For the Cinnamon Apple Filling:
  • 4 peeled green apples, cut in ¼ inch slices
  • ½ cup packed dark brown sugar
  • 1 tsp. cinnamon
  • For the Almond Biscuits:
  • 1 cup all purpose flour (120g)
  • tsp. baking powder
  • ½ tsp. salt
  • ¼ cup light brown sugar
  • 3 tbsp. unsalted butter, cut into half inch pieces
  • 5 tbsp. heavy cream
  • ¼ cup sliced almonds
  • 2 tsp. turbinado sugar

Instructions
 

  • Preheat the oven to 400 degrees.
  • Grease 4 4 and a half inch mini cast iron skillets with a teaspoon of butter each.
  • Toss the apples in a bowl with the half cup of dark brown sugar and the cinnamon. Then, divide them between the four skillets.
  • Sift the flour, baking powder, and salt into a large bowl. Stir in the quarter cup of brown sugar. Then, using a pastry cutter, cut the butter into the flour mixture, until the butter is the size of big crumbs. Stir in the cream until a dough forms. The dough will be very crumbly.
  • Empty the dough out on to a floured board and press it into a circle, about a half inch thick. Press the almonds into the top of the dough, and using a two inch biscuit cutter, cut out 8 biscuits. You might have to reroll the dough in order to get all eight biscuits. Top each skillet with two biscuits, and sprinkle with the turbinado sugar. Bake for 20 minutes, or until the biscuits are light brown. Serve warm with vanilla ice cream.
