Tex-Mex Salsa Pizza with Bread Machine Dough

Tex-Mex Salsa Pizza with Bread Machine Dough is a nice change from traditional Italian pizza. The crust is extra crispy because it contains cornmeal. And, instead of tomato sauce, this pizza is topped with Adobo sauce. In addition, the pizza is topped with a Monterey Jack cheese, mozzarella cheese, Corn and Black Bean Salsa, red peppers, and cilantro. Every bite bursts with fresh flavor.

The Equipment I Used

  • A Bread Machine- You’ll need a bread machine to make the dough.
  • A Pizza Stone- For best results, bake your pizza on a pizza stone.
  • A Pizza Peel- This makes putting the pizza in and out of the oven so much easier.
  • A Blender- You’ll need this to make the Adobo sauce.

The Ingredients Needed for Tex-Mex Salsa Pizza with Bread Machine Dough

  • Flour- Use all purpose flour for the pizza dough.
  • Yeast- Be sure and use active dry yeast for this dough.
  • Cheese- I used Monterey Jack and Mozzarella cheeses.
  • Ancho and Guajillo Chilies- These are dried chilies, that you should be able to find at a good supermarket.
  • Black Beans- I like to use dry beans, cook them, and store them in the freezer. But, you can also use canned beans.
  • Corn- Since it’s winter here, I used frozen corn. I cooked it for a couple of minutes in the microwave.

How I Made My Pizza

  • First, I used my bread machine to knead and rise the dough.
  • Next, I made the Adobo sauce, which is very simple to make.
  • Then, I rolled out the pizza dough and let it rise, while I preheated the oven and pizza stone.
  • Next, I baked the crust for awhile, and then took it out and added the Adobo sauce, cheese and peppers.
  • Then, I took the pizza out of the oven and added the Corn and Black Bean Salsa and the cilantro.
  • Finally, I served this yummy pizza!

Ingredients
  

For the Pizza Dough:

  • 1 cup water
  • 1 tbsp. extra virgin olive oil
  • 3 cups all purpose flour (360g)
  • ¼ cup cornmeal (30g)
  • 1 tsp. honey
  • 2 tsp. yeast

For the Adobo Sauce:

  • 4 dried ancho chilies
  • 6 dried guajillo chilies
  • 1 tbsp. honey
  • 1 tbsp. white vinegar
  • 1 tsp. oregano
  • ½ tsp. ground cumin
  • ¼ tsp. each cinnamon and cloves
  • 2 cups water

For the Southwestern Vegetable Pizza:

  • ½ cup Adobo Sauce
  • 1 cup each Monterey Jack and Mozzarella cheeses
  • ½ cup each cooked corn kernels and black beans
  • 2 tbsp. diced red onions
  • 1 tbsp. lime juice
  • 1 clove minced garlic
  • 1 tbsp. extra virgin olive oil
  • ½ cup chopped plum tomatoes
  • tsp. kosher salt
  • ½ cup chopped red pepper
  • 2 tbsp. cilantro leaves

Instructions
 

  • Begin by making the pizza dough: Put all the ingredients in your bread machine, in the order your bread machine suggests. Select the dough cycle.
  • While the dough is in the bread machine, prepare the Adobo Sauce: Remove the seeds and stems from the peppers and then toast them in a cast iron skillet on high heat for a few minutes, until you can smell their aroma. In a three quart saucepan, boil the peppers, and then put them in the blender, along with the rest of the Adobo Sauce ingredients. Blend until the mixture is smooth. You'll need about a half cup to top the pizza. Freeze the rest for another use.
  • When the dough cycle ends, roll the dough out on a parchment covered pizza peel. Brush with olive oil and cover with plastic wrap. Let rise for thirty minutes.
  • Heat the pizza stone for thirty minutes in a 425 degree oven.
  • Prepare the Corn and Black Bean Salsa by mixing together the beans, corn, tomato, onions, garlic, lime juice, salt, and olive oil.
  • When the dough is done rising, bake it for 20 minutes. Then remove it and top it with about a half cup of adobo sauce, the cheeses, and the red pepper. Bake for 10 more minutes, or until the crust is golden brown. Remove the pizza and top it with the Corn and Black Bean Salsa and the cilantro.
