Tex-Mex Shrimp Salad Bowls

Tex-Mex Shrimp Salad Bowls are one of our favorite shrimp dinners. This meal-in-a-bowl features spicy shrimp and fresh veggies, topped with a Creamy Cilantro Dressing. We love these bowls for several reasons. First of all, I love that I can make this complete meal in thirty minutes. Secondly, I like that I can make this meal ahead of time. In fact, I often make this meal the day before I want to serve it. Finally, we all love the fresh and spicy flavor in these bowls.

The Equipment I Used

  • A Food Processor- Ususally I use a food processor to make the dressing. But, sometimes I just chop my cilantro really fine by hand.
  • Big Bowls- I like to serve this salad in large, individual bowls.
  • A Grill Pan-I like to make my shrimp on a grill pan. But, you can also make them in a nonstick skillet.

The Ingredients Needed for Tex-Mex Shrimp Salad Bowls

  • Shrimp- I always use Gulf shrimp, since I think they have the best flavor. I actually prefer to buy the frozen shrimp.
  • Spices- Chili powder, cumin, garlic powder, and salt add lots of great flavor to the shrimp.
  • Cilantro- Fresh cilantro is the basis for the creamy dressing. Be sure to wash your cilantro really well.
  • Jalapeno- Just a little bit of jalapeno adds great flavor. Be sure to remove the seeds and membranes.
  • Mayonnaise- I like Hellman’s brand mayonnaise.
  • Buttermilk- Whole milk buttermilk is my favorite.
  • Lime Juice- Taste your dressing, and add more lime juice if you think it needs it.
  • Lettuce- I used baby lettuce, but you could also use chopped romaine.
  • Cucumber- I like to use the English cucumbers that don’t need to be peeled.
  • Monterey Jack Cheese- You could also use cheddar cheese.

How I Made my Shrimp Bowls

  • First, I grilled my shrimp. It’s important to cook the shrimp all the way through.
  • Next, I made the dressing. Be sure to taste the dressing. It might need more lime or salt.
  • Finally, I topped the lettuce with all the veggies and the shrimp and served the bowls. I served the dressing on the side.

Tex-Mex Shrimp Salad Bowls

Ingredients
  

For the Tex-Mex Shrimp Salad Bowls:

  • 1 pound large Gulf Shrimp, peeled and deveined
  • 1 tbsp. extra virgin olive oil
  • ½ tsp. each chili powder. garlic powder, kosher salt and ground cumin
  • 4 cups baby lettuce
  • 1 cup cucumber slices
  • 1 cup grape tomatoes, halved
  • ½ cup Monterey Jack cheese, cut in half inch cubes
  • ½ cup red onion, sliced
  • 1 lime, cut in wedges

For the Creamy Cilantro Dressing:

  • 1 cup cilantro leaves
  • 1 tbsp. minced jalapeno
  • ½ cup mayonnaise
  • 2 tbsp. whole milk buttermilk
  • 1 tbsp. lime juice

Instructions
 

  • Toss the shrimp with the spices and salt. Heat a grill pan on high heat and brush it with the oil. Grill the shrimp on both sides, until they're cooked through, for about five minutes. Remove to a plate and chill.
  • Next make the Creamy Cilantro Dressing: Place the cilantro and jalapeno in a food processor and process until they're finally chopped. Or finely chop them by hand. Add the rest of the ingredients and process or stir unitl well blended.
  • Divide the greens between four bowls. Top with the rest of the Shrimp Bowl ingredients. Serve along with the dressing.
