For the Apricot Waffles:
- 2 cups all-purpose flour (240g) (248g)
- 4 tsp. baking powder
- 1 tbsp. brown sugar
- ¼ tsp. salt
- 3 eggs
- ½ cup sour cream
- ½ tsp. each vanilla extract and almond extract
- 1 cup whole milk
- ½ cup melted butter
- ¼ cup rainbow sprinkles
For the Strawberry Syrup:
- 4 cups sliced strawberries
- 1 cup sugar
- 1 cup water
- 2 tbsp. cornstarch
For The Toppings:
- 2 cups whipped cream
- 1 cup halved strawberries
- ¼ cup rainbow sprinkles
Begin by making the Strawberry Syrup: In a 3 quart saucepan, simmer all the ingredients, until thick and syrupy, about 10 minutes.
While the syrup is simmering, make the waffles: Sift the flour, baking powder, sugar, and salt together and set aside.
In a large mixing bowl, beat the eggs, and then mix in the sour cream and milk. Add the flour mixture, stirring just until no streaks of flour appear. Try not to overmix. Stir in the sprinkles and butter.
Cook batter in your waffle iron, according to its directions.
Top the waffles with some syrup, some halved strawberries, some sprinkles, and whipped cream.
