Confetti Waffles with Strawberry Syrup

Confetti Waffles with Strawberry Syrup are one of our favorite breakfasts. I start these waffles by making vanilla waffles speckled with rainbow sprinkles. Then, I top them with my homemade strawberry syrup. I also add whipped cream and fresh strawberries. Sometimes, to turn these into a dessert, I add on some strawberry ice cream. We like these waffles for several reasons. First of all, I like that I can make these waffles in less than an hour. That makes this a very doable breakfast for weekend mornings. Secondly, I like that the batter and syrup can be made the day before you want to serve them. And, lastly, we all love the fun sprinkles and the sweet strawberries.

The Equipment I Used

  • A Waffle Iron- You’ll need a waffle iron to make these waffles.
  • An Electric Mixer- I use this to whip the whipped cream for my waffles.
  • A Food Scale- For perfect waffles, be sure to weigh your flour and sugar.
  • A Sieve or Sifter- Be sure to use this to sift your dry ingredients.

The Ingredients Needed for Confetti Waffles with Strawberry Syrup

  • Flour- Be sure to use all purpose flour.
  • Sour Cream- Use full fat sour cream.
  • Butter- Use unsalted butter.
  • Strawberries- I actually used frozen strawberries to make my syrup. You don’t need to defrost the berries before using them. But, you can also use fresh ones.
  • Milk- Be sure to use whole milk.
  • Cornstarch- Use this to thicken the syrup.
  • Heavy Cream- I used this to make my own whipped cream. I just added about a half cup to the bowl of my electric mixer and beat it with the whisk beater.

How I Made my Waffles

  • First, I made the syrup. It’s important to simmer the strawberries until the syrup gets nice and thick.
  • Next, I made the waffle batter. Do not overmix the batter.
  • Finally, I added all the toppings to our waffles.

Ingredients
  

For the Apricot Waffles:

  • 2 cups all-purpose flour (240g) (248g)
  • 4 tsp. baking powder
  • 1 tbsp. brown sugar
  • ¼ tsp. salt
  • 3 eggs
  • ½ cup sour cream
  • ½ tsp. each vanilla extract and almond extract
  • 1 cup whole milk
  • ½ cup melted butter
  • ¼ cup rainbow sprinkles

For the Strawberry Syrup:

  • 4 cups sliced strawberries
  • 1 cup sugar
  • 1 cup water
  • 2 tbsp. cornstarch

For The Toppings:

  • 2 cups whipped cream
  • 1 cup halved strawberries
  • ¼ cup rainbow sprinkles

Instructions
 

  • Begin by making the Strawberry Syrup: In a 3 quart saucepan, simmer all the ingredients, until thick and syrupy, about 10 minutes.
  • While the syrup is simmering, make the waffles: Sift the flour, baking powder, sugar, and salt together and set aside.
  • In a large mixing bowl, beat the eggs, and then mix in the sour cream and milk. Add the flour mixture, stirring just until no streaks of flour appear. Try not to overmix. Stir in the sprinkles and butter.
  • Cook batter in your waffle iron, according to its directions.
  • Top the waffles with some syrup, some halved strawberries, some sprinkles, and whipped cream.
