Roasted Garlic Fondue Burgers with Sweet Potato Spirals
Beef Burgers topped with roasted garlic cheddar fondue on a brioche bun with arugula, tomato, and red onion. The burgers are served with some air fried spiralized sweet potatoes.

- 6 ounces roasted garlic cheddar cheese, shredded
- 1 tbsp. cornstarch
- 8 ounces evaporated milk
- 1 pound ground beef chuck
- ¼ tsp. each kosher salt and black pepper
- 2 sweet potatoes, peeled and spiralized
- 1 tbsp. vegetable oil
- 4 brioche buns
- 1 cup arugula
- 2 plum tomatoes
- 4 slices red onion
Begin by making the Garlic Cheddar Fondue. In a small bowl, mix together the cheese and the cornstarch. In a three quart saucepan, heat the milk and bring it to a simmer. Turn the heat to low and stir in the cheese. Whisk until the sauce thickens. You can reheat this right before serving, on low heat.
Sprinkle the beef with salt and pepper, and form it into four patties. Heat a cast iron skillet to high heat. Drizzle the pan with a little olive oil, and cook the burgers to your desired doneness.
Meanwhile, cook a handful of sweet potatoes at a time, in the air fryer at 390 degrees, in a single layer. Cook for about five minutes and then sprinkle with kosher salt. Repeat with remaining potatoes.
Place burgers on the buns and top with fondue, arugula, tomato, and onion. Serve sweet potatoes on the side.
