  • A Small Jar- You’ll need this to shake up your honey mustard salad dressing.
  • A Small Skillet- You’ll need this to fry up your bacon.
  • A Salad Spinner- You’ll need this to properly dry your salad greens.
  • A Big Bowl- You’ll need this to mix up your salad.

The Ingredients You’ll Need for Hudson Valley Pear Salad with Honey Mustard Dressing

  • Pears- I used Bartlett pears, but I think you should use whatever pears look best at your market.
  • Bacon- I used Niman Ranch Applewood Smoked Bacon for this salad.
  • Gorgonzola Cheese- I bought a crumbled gorgonzola cheese for this recipe. It had a nice mild flavor. I put it in the freezer, so it will be ready and waiting for me next time I need it.
  • Dried Cherries- You could also used dried cranberries, but I think the cherries have a sweeter and better taste.
  • Extra Virgin Olive Oil- I like the California Ranch brand, because it has a nice mild flavor.

How I Made This Salad

  • This salad is super easy to make, and you can make it ahead, and then put the dressing on right before you serve it.
  • First, I fried up the bacon, and drained it. I was careful to keep a close eye on the bacon, so it didn’t burn.
  • Next, I used my salad spinner to wash and dry my lettuce.
  • Then, I made the honey mustard dressing and tossed it with the lettuce.
  • Finally, I cut up the pear, added the rest of the ingredients, and tossed everything together.
  • I served it with chicken fajitas, which I know doesn’t really go with this salad, but it’s what everyone wanted for dinner.

Ingredients
  

  • 4 slice bacon, cut in one inch pieces
  • 4 cups spring greens
  • ½ cup extra virgin olive oil
  • 3 tbsp. apple cider vinegar
  • 2 tbsp. honey
  • 1 tsp. Dijon mustard
  • 2 sliced pears
  • ½ cup sliced red onion
  • ½ cup pecan halves
  • ½ cup dried cherries
  • ½ cup crumbled gorgonzola cheese

Instructions
 

  • On low heat, in a skillet, cook the bacon until it's crisp, and then drain it on a paper towel.
  • In a small jar, mix together the vinegar, oil, mustard, and honey. That will be your honey mustard dressing.
  • Toss the spring greens with the dressing, and then layer the rest of the ingredients on top.
