Arugula and Radicchio Salad with Raspberry Vinaigrette

Arugula and Radicchio Salad with Raspberry Vinaigrette is a delicious spring salad. I love this salad for several reasons. First of all, I like that this salad uses fresh fruit. It’s a nice change from all vegetable salads. Secondly, this whole salad takes just minutes to make. Thirdly, I like to add grilled chicken to this salad and eat it as a main course. And, lastly, I adore this salad because it’s truly scrumptious.

The Equipment Needed

  • A Food Processor- You’ll need a food processor for this recipe. That way, you can puree the berries and combine all the ingredients.
  • A Salad Spinner- Use this to dry your arugula. If your greens are wet, the dressing can’t cling to them. And, the secret to a great salad is having some vinaigrette on every leaf in your salad.
  • A Big Bowl- Toss your salad together in a big bowl. That way, you’ll get some dressing on every part of the salad.

The Ingredients Needed for Arugula and Radicchio Salad with Raspberry Vinaigrette

  • Extra Virgin Olive Oil- Use a good, mild olive oil. I like the California Olive Ranch brand.
  • Raspberry Vinegar- Feel free to substitute red wine vinegar, if you don’t want to buy a special vinegar just for this recipe.
  • Raspberries- Inspect the berries carefully before you buy them. Try and use them the same day you buy them.
  • Arugula- I like to buy the prewashed baby arugula. Earthbound Farms is my favorite.
  • Radicchio- This is a somewhat bitter green. But, it goes nicely with the sweet dressing.
  • Apple- I always use green Granny Smith apples. But, use your favorite apple.

How I Made my Salad

  • First, I processed all the vinaigrette ingredients in my food processor. If it’s not sweet enough for you just add more honey.
  • Then, I tossed all the other ingredients together in a big bowl.
  • Finally, I added most of the dressing and tossed everything together.

Ingredients
  

  • 3 cups arugula
  • 1 cup radicchio, chopped in bite sized pieces
  • 1 cup raspberries
  • 1 cup sliced apples
  • ½ cup chopped pecans

For the Raspberry Vinaigrette:

  • ½ cup extra virgin olive oil
  • 3 tbsp. raspberry vinegar
  • 1 tbsp. honey
  • ¼ cup raspberries

Instructions
 

  • Begin by making the Raspberry Vinaigrette: Blend all the ingredients together in the food processor.
  • Toss all the salad ingredients together in a bowl and then add as much dressing as you like and toss some more.
