Chocolate Chip Skillet Cookies
Once you bake your chocolate chip cookies in a cast iron skillet, there’s no going back to baking them off the old way. I’ve been making this very same dough for twenty years, for after school snacks, and school parties. But, they’ve never tasted as good as they do when baked in these little skillets.
Equipment:
- The Skillets- You don’t need 8. I just bake a couple at a time, so they’re always warm and melty.
- A Food Processor- This is needed to get the oats fine enough to blend into the dough.
- A Mixer or a Wooden spoon- You can use either one, but it’s important not to overbeat the dough.
Recipe Tips:
- If you don’t have skillets these can be baked on parchment lined sheets at 350 degrees for 16 minutes. Use a quarter cup of dough per cookie.
- I’ve made these with all organic ingredients, and all generic ingredients. They taste great either way.
- The dough can be frozen, and baked while frozen. Just cook them for a few extra minutes.
Chocolate Chip Skillet Cookies
Warm and chocolatey, these big cookies baked in individual skillets make a perfect after school snack.
Equipment
- 8 six inch cast iron skillets
- Food processor
Ingredients
- 1/2 cup old-fashioned oats
- 2 1/4 cups flour (270g)
- 1 1/2 tsp baking soda
- 1/2 tsp. salt
- 1 cup butter, softened (16 tablespoons)
- 3/4 cup dark brown sugar, packed tightly
- 3/4 cup white sugar
- 2 tsp. vanilla
- 1 tsp. fresh lemon juice
- 2 eggs
- 2 cups semisweet chocolate chips
Instructions
- In a food processor, pulse the oatmeal until it is coarsely ground.
- Meanwhile, preheat the oven to 350 degrees and grease each pan with butter.
- In a small mixing bowl, sift the flour, baking soda, and salt. Stir in the oats.
- In a large mixing bowl, cream the butter, sugar, vanilla, and lemon juice. Add the eggs and stir until combined,
- Stir the flour mixture into the butter/sugar mixture, until just combined. Stir in the chocolate chips.
- Put equal amounts (about 2/3 of a cup) into each skillet. Bake for 15 minutes and serve.
