Pork Medallions with Basil and Peppers
Pork Medallions with Basil and Peppers consists of sliced pork tenderloin marinated in oyster and soy sauces, mixed with sweet basil, garlic, jalapeno, and mini peppers. Not only is this dish delicious, but it can be made, from start to finish, in thirty minutes.
The Equipment You’ll Need
- A Cast Iron Skillet- This does the best job of cooking the pork. If you don’t have one, any large skillet will do.
- An Instant Read Meat Thermometer- While not essential, this is helpful for testing the temperature of the pork.
The Ingredients You’ll Need for Pork Medallions with Basil and Peppers
- Pork Tenderloin- If you’ve never tried pork tenderloin, it’s super tender and very easy to cook. My family aren’t huge pork lovers, but do occasionally enjoy pork tenderloin.
- Oyster Sauce- This is a Chinese sauce, that can be found in the Asian aisle at your market.
- Soy Sauce- I used lite soy sauce, to cut down on the salt.
- Mini Sweet Peppers- I used mini sweet peppers for this recipe, but you could also use bell peppers.
- Jalapeno- This gives the dish a little heat, but if you don’t like spicy food, just leave it out.
- Basil- Basil gives this dish so much flavor. Thai basil would be even better, but I just can’t seem to get it here in New York.
How I Made This Dish
- First, I marinated the pork for a short time, just while I cooked the veggies.
- Next, I cooked the peppers, until they were just tender, and then I added the jalapeno, garlic and basil. I removed these to a dish and kept them warm while I made the pork.
- Finally, I cooked the pork, until it reached an internal temperature of 145 degrees.
This is such a quick and easy dish, but the tender pork adds a definite touch of luxury that makes this meal feel quite special. Sometimes I serve it with noodles, but I also like to serve it with fried rice. I hope you’ll try these delicious Pork Medallions with Basil and Peppers some time soon!
Pork Medallions with Basil and Peppers
Pork Tenderloin marinated in oyster sauce and tossed with basil and sweet peppers.
Ingredients
- 1 lb. pork tenderloin, cut in half inch slices
- 3 tbsp. oyster sauce
- 3 tbsp. light soy sauce
- 2 tbsp. extra virgin olive oil
- 1 cup sliced mini peppers
- 1 minced jalapeno
- 3 tbsp. minced garlic
- 2 cups basil leaves
- 1 tbsp. sesame seeds
- ¼ tsp. red pepper flakes
Instructions
- In a small bowl stir together the soy sauce and oyster sauce. Marinate the pork in there while you cook the vegetables.
- Heat a cast iron skillet to medium heat with one tablespoon of the oil, and cook the peppers until they're softened. Then add the garlic, jalapeno, and basil and cook two minutes. Remove everything from the pan to a plate. Cover and keep warm.
- Heat the rest of the oil, and cook the pork, in a single layer, for about four minutes per side, until an internal temperature of 145 degrees.
- Serve the pork with the reserved vegetables and noodles or rice. Garnish with the sesame seeds and red pepper flakes.
