Walnut Banana Bread Pancakes with Chocolate Chips

Walnut Banana Bread Pancakes with Chocolate Chips are pancakes with all the flavors of chocolate chip banana bread. They are filled with bananas, walnuts, and chocolate chips. But, unlike banana bread, these pancakes cook in just minutes.

The Equipment You’ll Need

  • A Food Scale- Weighing your flour, instead of using cup measures, will ensure that your pancakes come out perfectly every time.
  • A Sieve- I like to use a fine mesh sieve to sift my dry ingredients. Whenever I skip this step, someone complains they can taste the sour baking soda/powder. But, sifting takes care of this problem.
  • A Non-Stick Skillet or Griddle- Non-stick is definitely the way to go with pancakes.

The Ingredients You’ll Need for Walnut Banana Bread Pancakes with Chocolate Chips

  • Bananas- Personally, I like bananas that are just barely ripe, and not overly sweet or strongly flavored. If you like the taste of very ripe bananas, that’s what you should use, though.
  • Chocolate Chips- I used Guittard semisweet chocolate chips. Feel free to use mini chocolate chips, if you prefer.
  • Whole Milk, Plain Greek Yogurt- You could also use sour cream.

How I Made my Pancakes

  • First, I prepared my dry ingredients. I took special care to weigh my flour. And, then I sifted together all the dry ingredients.
  • Next, I combined the wet ingredients. I just used a fork to combine them.
  • Then, I stirred the wet ingredients into the dry ingredients. Again, I just used a fork, and was very careful not to over mix the pancakes. Overmixing creates tough pancakes. You want to combine the ingredients just until no streaks of flour remain.
  • Next, I melted the butter and then stirred it into the batter, until it was just combined.
  • Then, I added the walnuts and chips.
  • Finally, I cooked the pancakes until they were golden on both sides.

Ingredients
  

  • 1 cup all purpose flour (120g)
  • 1 tbsp. baking powder
  • ¼ tsp. salt
  • 1 tbsp. granulated sugar
  • 1 large egg
  • 1 small banana, mashed
  • 1 cup whole milk
  • ¼ cup plain, full fat Greek yogurt
  • 1 tsp. vanilla extract
  • 2 tbsp. melted butter
  • 1 cup semi sweet chocolate chips
  • ½ cup finely chopped walnuts
  • 2 tbsp. butter for greasing the pan
  • ½ cup maple syrup
  • 1 sliced banana

Instructions
 

  • Sift together the flour, baking powder, salt, and sugar into a large mixing bowl.
  • In a second, smaller bowl, beat together the egg, mashed banana, vanilla, yogurt, and milk. Then stir this into the flour mixture, until just combined. Stir in the melted butter, and then a half cup of the chocolate chips and all the walnuts.
  • Heat a nonstick griddle or skillet, and melt a teaspoon of butter. Depending on what size you want your pancakes, ladle the correct amount of batter onto the skillet. When bubbles appear ,flip your pancakes. Add more butter, each time you add more pancakes to the skillet.
  • Top pancakes with chocolate chips, sliced bananas, and maple syrup.
