Lemony Tomato and Basil Linguini is one of our favorite springtime dinners. I start this fresh and zesty lemon-infused dish by cooking my linguini in lots of well-salted water. Then, I toss it with lemon juice, butter, baby arugula, Parmesan, basil and cherry tomatoes. We like this vibrant tomato and basil linguini for several reasons. First of all, I like that I can make this light and tangy citrus linguini in just 20 minutes. That makes this a great dinner for busy days. Secondly, I like how easily this dish reheats. I just reheat individual portions in the microwave. And, lastly, we all love the sweet tomatoes and buttery linguini.
THE EQUIPMENT I USED
A Large Pot- You’ll need a big pot to cook your pasta for this zesty tomato and basil linguini with a twist of lemon.
THE INGREDIENTS NEEDED FOR LEMONY TOMATO AND BASIL LINGUINI
Tomatoes- Use cherry or grape tomatoes for this Lemony Tomato and Basil Linguini.
Arugula- Use baby arugula
Butter- I always use Kerrygold unsalted Irish butter.
Lemon Juice- Be sure to use freshly squeezed lemon juice for this linguini kissed with the flavors of lemon, tomato, and basil.
Linguini- I always use Barilla linguini. Cook it until it’s just al dente.
Cheese- Use finely grated Parmesan cheese for this light and tangy citrus linguini.
Oil- Use a good quality extra virgin olive oil.
Basil- Use fresh basil.
HOW I MADE MY PASTA
First, I cooked the linguini. I took care to not overcook it.
Next, I stirred together the no-cook sauce for this delightfully aromatic basil and tomato linguini.
Finally, I tossed everything together until every strand of pasta was coated in the rich sauce.

Lemony Tomato and Basil Linguini
Linguini, cherry tomatoes, and fresh basil tossed in a lemon butter Parmesan sauce. This dinner serves 4 and cooks 15 minutes.
Bring a large pot of water to a boil, for the pasta. Add the kosher salt to the boiling water. Cook the linguini until al dente.
As the pasta cooks, in a bowl, stir together the oil, butter, and lemon juice. Stir in the cheese and pepper.
Drain the linguini and put it back in the pot. Add the lemon/oil/butter mixture, along with the rest of the ingredients. Toss until the linguini is coated.

That way, it’s crispy on the outside, but moist and juicy inside. Then, I drizzle them with a spicy honey butter sauce. We love these drumsticks for several reasons. First of all, I like that I can make this meal in less than an hour. Secondly, I like that I can make this homemade fried chicken for not much money since it uses ingredients I always have in the house. And, lastly, we all love the spicy and delicious flavors in these crunchy chicken drumsticks.
THE EQUIPMENT I USED
A Big Pot- I like to fry my chicken in an enameled cast iron pot. But, you can use any pot, or a cast iron skillet.
A Deep Fry Thermometer- Use this to measure the temperature of your oil.
THE INGREDIENTS NEEDED FOR CRISPY FRIED CHICKEN DRUMSTICKS
Chicken- Use chicken drumsticks for this fried chicken recipe. I ordered mine from Rastelli’s.
Buttermilk- If possible, use whole milk buttermilk.
Vegetable Oil- I like to fry my chicken in Crisco vegetable oil. You can also use canola or peanut oil.
Flour- Use all purpose flour for dredging the chicken.
HOW I MADE MY HOMEMADE FRIED CHICKEN
First, I dredged the chicken in the buttermilk and spiced flour.
Next, I fried the chicken. It’s important to fry the chicken when the oil is exactly 350 degrees.
Then, I made the spicy honey butter.
Then, I drizzled the drumsticks with the spicy honey butter.

Crispy Fried Chicken Drumsticks
Crispy fried chicken drumsticks drizzled with spicy honey sauce.
Preheat the oven to 350 degrees. Place a rack inside a sheet pan.
In a cast iron Dutch oven, or other heavy pot, heat about one inch of oil until it reaches 350 degrees.
As the oil heats, prepare your dredging station. Fill one bowl with the buttermilk and one teaspoon of tabasco. Divide the flour and spice between two bowls.
Dip each piece of chicken into the first bowl of flour, then in the buttermilk, and then back in the flour. When the oil reaches 350 degrees fry the chicken three pieces at a time until they are golden brown on all sides. They will cook about 7 minutes. Do not add the second batch of chicken until the oil reheats to exactly 350 degrees. Put the fried drumsticks on a wire pan.
Bake the drumsticks until they reach an internal temperature of 165°, for about 15 minutes.
For the Spicy Honey Sauce, mix 4 tbsp. butter with 1 tsp of Tabasco sauce and 4 tbsp. of honey in a small saucepan and cook over low heat until the butter melts. Dip each piece of chicken in the Spicy Honey Sauce.

THE EQUIPMENT I USED

A large skillet- You’ll need this to toss the pasta, and coat it with the sauce. If you don’t have one, just toss the pasta in a Dutch oven or large pot.
THE INGREDIENTS NEEDED FOR BROWN BUTTER LOBSTER LINGUINI
The lobsters- Try and buy lobsters that look perky, and not ones that just lie there looking sleepy. Try and cook them as soon as you bring them home.
The linguini- I strongly recommend Barilla linguini, since it takes the most like homemade.
The garlic- Look for garlic with out green shoots in the middle.
HOW I MADE MY GOURMET BROWN BUTTER LOBSTER LINGUINI
First, I cooked my lobsters early in the day, right after I bought them. I took the meat out of the shells, too.
Next, I boiled my pasta water, and made a side salad. And, I chopped the tomatoes, garlic, and basil.
Then, as the pasta cooked for 5 minutes, I melted the butter and cooked the garlic.
Finally, I drained the pasta, and tossed everything together.
I served this pasta with a simple salad with blue cheese dressing.
This would be a fantastic dish to serve to lobster loving guests. To serve it to my children, I made a plain skillet-full with just pasta, butter, and lobster. Everyone loved it! If you’re trying to save money, try and make this when lobster goes on sale at the supermarket, and only make one or two lobsters, instead of 4. Just cut the lobster meat in smaller pieces, and everyone will still feel as though they’ve had a luxurious meal. I hope you’ll try this quick, decadent, lobster-filled dinner sometime this summer, so that you too, can enjoy my favorite summer food! Brown Butter Lobster Linguini
Steamed lobster tossed with fettuccini, tomatoes, and basil, in a brown butter sauce.
Bring 2 inches of water to a boil, in a very large pot.
Add the lobsters, and hold down the lid to kill the lobsters quickly. Steam them for 12 minutes.
Remove the lobster meat from the shells and chop it into one-inch pieces. Cover the lobster to keep it warm.
Bring a large pot of water to a boil, for the pasta. Cook the pasta until al dente and then drain well.
As the pasta cooks, melt the butter in a large skillet, and cook it on low heat until it turns light brown. Add the garlic and cook it for another minute.
Cook for a minute, and then add the tomatoes, red pepper flakes, salt, lobster, and cheese.
Cook for another minute, and then add the drained pasta. Toss everything together. Put in a serving bowl and top with the basil.
