Tex-Mex Shrimp Salad Bowls

Tex-Mex Shrimp Salad Bowls are one of our favorite shrimp dinners. This meal-in-a-bowl features spicy shrimp and fresh veggies, topped with a Creamy Cilantro Dressing. We love these bowls for several reasons. First of all, I love that I can make this complete meal in thirty minutes. Secondly, I like that I can make this meal ahead of time. In fact, I often make this meal the day before I want to serve it. Finally, we all love the fresh and spicy flavor in these bowls.

The Equipment I Used

  • A Food Processor- Ususally I use a food processor to make the dressing. But, sometimes I just chop my cilantro really fine by hand.
  • Big Bowls- I like to serve this salad in large, individual bowls.
  • A Grill Pan-I like to make my shrimp on a grill pan. But, you can also make them in a nonstick skillet.

The Ingredients Needed for Tex-Mex Shrimp Salad Bowls

  • Shrimp- I always use Gulf shrimp, since I think they have the best flavor. I actually prefer to buy the frozen shrimp.
  • Spices- Chili powder, cumin, garlic powder, and salt add lots of great flavor to the shrimp.
  • Cilantro- Fresh cilantro is the basis for the creamy dressing. Be sure to wash your cilantro really well.
  • Jalapeno- Just a little bit of jalapeno adds great flavor. Be sure to remove the seeds and membranes.
  • Mayonnaise- I like Hellman’s brand mayonnaise.
  • Buttermilk- Whole milk buttermilk is my favorite.
  • Lime Juice- Taste your dressing, and add more lime juice if you think it needs it.
  • Lettuce- I used baby lettuce, but you could also use chopped romaine.
  • Cucumber- I like to use the English cucumbers that don’t need to be peeled.
  • Monterey Jack Cheese- You could also use cheddar cheese.

How I Made my Shrimp Bowls

  • First, I grilled my shrimp. It’s important to cook the shrimp all the way through.
  • Next, I made the dressing. Be sure to taste the dressing. It might need more lime or salt.
  • Finally, I topped the lettuce with all the veggies and the shrimp and served the bowls. I served the dressing on the side.

Ingredients
  

For the Tex-Mex Shrimp Salad Bowls:

  • 1 pound large Gulf Shrimp, peeled and deveined
  • 1 tbsp. extra virgin olive oil
  • ½ tsp. each chili powder. garlic powder, kosher salt and ground cumin
  • 4 cups baby lettuce
  • 1 cup cucumber slices
  • 1 cup grape tomatoes, halved
  • ½ cup Monterey Jack cheese, cut in half inch cubes
  • ½ cup red onion, sliced
  • 1 lime, cut in wedges

For the Creamy Cilantro Dressing:

  • 1 cup cilantro leaves
  • 1 tbsp. minced jalapeno
  • ½ cup mayonnaise
  • 2 tbsp. whole milk buttermilk
  • 1 tbsp. lime juice

Instructions
 

  • Toss the shrimp with the spices and salt. Heat a grill pan on high heat and brush it with the oil. Grill the shrimp on both sides, until they're cooked through, for about five minutes. Remove to a plate and chill.
  • Next make the Creamy Cilantro Dressing: Place the cilantro and jalapeno in a food processor and process until they're finally chopped. Or finely chop them by hand. Add the rest of the ingredients and process or stir unitl well blended.
  • Divide the greens between four bowls. Top with the rest of the Shrimp Bowl ingredients. Serve along with the dressing.

First of all, this bread machine dough is effortless. I love letting the bread machine do all the work for me. Secondly, I like that I can make all the components for this pizza ahead of time and then bake the pizza right before dinner. And, lastly, we all love the fantastic mild flavor of the coconut curry.

The Equipment I Used

  • A Bread Machine- You’ll need a bread machine for the recipe. See my recipe for Barbecue Chicken Pizza with Two Sauces, which has my hand kneaded pizza dough on it.
  • A Food Scale- For perfect results, be sure to weigh your flour.
  • Pizza Peels- I roll my pizzas out on two parchment lined pizza peels.
  • Pizza Stones- I bake my pizzas on pizza stones.

The Ingredients Needed for Yellow Coconut Curry Pizza

  • Heavy Cream- Be sure to use heavy cream, and not light cream, for the coconut curry.
  • Coconut Milk- Do not use low fat coconut milk.
  • Fish Sauce- You can find this in the Asian section of your market.
  • Chicken – Use a boneless, skinless chicken breast.
  • Mozzarella- Use fresh mozzarella.
  • Flour- Be sure to use all-purpose flour for the dough. I like the King Arthur brand of flour.
  • Yeast- Use active dry yeast, not quick rising.

How I Made my Pizza

  • First, I made my dough in the bread machine. Be sure to add all the ingredients in the order specified by your bread machine.
  • Next, I made the curry sauce. You’ll need to cook it until it thickens up.
  • Then, I roasted my chicken.
  • Finally, I baked off the pizzas. Be sure to preheat your pizza stones.

Ingredients
  

For the Bread Machine Pizza Dough:

  • 1 cup water
  • 1 tbsp. extra virgin olive oil
  • 3 cups all-purpose flour (360g)
  • 1 tsp. honey
  • 1 tsp. salt
  • 2 tsp. active dry yeast

For the Yellow Coconut Curry Sauce:

  • 1 tbsp. unsalted butter
  • ½ cup heavy cream
  • ½ cup coconut milk
  • 2 tsp. brown sugar
  • ½ tsp. each fish sauce and coriander powder
  • ¼ tsp. each cumin, black pepper, yellow mustard powder, ginger powder, and fennel seed
  • 3 ounces cream cheese, softened

For the Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp. each unsalted butter and extra virgin olive oil
  • â…› tsp. each kosher salt, black pepper, and garlic powder

To Assemble the Pizza:

  • 2 cups fresh mozzarella, shredded
  • 1 cup diced red and yellow bell peppers
  • 2 plum tomatoes, seeded and diced
  • ¼ cup sliced red onion
  • 2 tbsp. cilantro leaves

Instructions
 

  • Begin by making the pizza dough: Add all the ingredients to your bread machine in the order suggested by the manufacturer. Select the dough cycle and press start.
  • Next, make the Yellow Coconut Curry: In a large skillet, melt the butter. Add the rest of the ingredients-except for the cream cheese- and simmer until thickened for about ten minutes. Whisk in the cream cheese and remove from the heat.
  • Next, make the chicken: Preheat the oven to 450 degrees. Put the chicken in a baking dish, and top with the rest of the ingredients. Bake for 20 minutes or until cooked through. Chop into half inch pieces and stir in two tablespoons of the yellow coconut curry sauce.
  • When the dough cycle is done, dump the dough on a floured board, and cut it in half. Roll each half into a 12- inch circle, on parchment covered baking peels. Brush the dough rounds with olive oil, and cover with plastic wrap. Let them rise for 30 minutes. Preheat the oven to 425 degrees. Bake the dough on pizza stones for ten minutes.
  • Top the dough with the yellow coconut curry sauce, and then sprinkle on the mozzarella cheese and the vegetables. Bake for ten more minutes. Sprinkle on the cilantro.

Spaghetti Alfredo with Chicken and Peas

Spaghetti Alfredo with Chicken and Peas is one of our favorite chicken dinners. I start this dish by caramelizing onions and baking chicken. Then, I cook my spaghetti and make a light Alfredo sauce. We love this dish for several reasons. First of all, I like that I can make this dish in less than an hour. I like to make a nice dinner, so to me, an hour cooking is just fine. Secondly, I like that this dish uses ingredients I always have in the house. That, in turn, makes this dish fairly inexpensive to prepare. And, lastly, we all love the rich and delicious flavor in this dish.

The Equipment I Used

  • A Large Pot- Use a big pot with lots of water and salt to cook your spaghetti.
  • Dutch Ovens- I use Dutch oven for the caramelized onions and to make the Alfredo sauce. But, you can use a different kind of pot.
  • A Medium Baking Dish- I use this to bake my chicken in.

The Ingredients Needed for Spaghetti Alfredo with Chicken and Peas

  • Spaghetti- I used Barilla spaghetti, but you can use any pasta shape that you like.
  • Heavy Cream- Be sure to use heavy cream, not light cream or half and half.
  • Milk- Use whole milk, not low fat or skim milk.
  • Chicken- Use boneless, skinless chicken breasts.
  • Cayenne Pepper- I used this on my chicken to spice it up. If you don’t like spicy foods, just leave this out.
  • Peas- Use frozen peas, and you don’t need to defrost them first.
  • Onions- I used red onions, but you can also use white onions. If you want to make a quicker meal, just leave these out. I had leftover caramelized onions in my freezer, so that saved me lots of time.

How I Made my Spaghetti Alfredo

  • First, I made the caramelized onions. This recipe makes more onions than you’ll need for this dish. Freeze the extra onions and you can use them in lots of other dishes.
  • Next, I baked the chicken.
  • Then, I made the Alfredo sauce. Be sure to simmer the sauce until it’s nice and thick.
  • Finally, I tossed everything together and served it up.
