Watermelon Feta and Blueberry Salad

Watermelon Feta and Blueberry Salad is one of our favorite summer salads. I start this salad by making an easy Lemon Vinaigrette. Then, I use a star cookie cutter to cut watermelon stars from thin slices of watermelon. Finally, I toss these all together with baby arugula, tangy feta cheese, and sweet blueberries. We like this salad for several reasons. First of all, I like that I can make this beautiful salad in just about fifteen minutes. Secondly, I like that I can make this salad ahead of time. I like to make it early in the day and add the dressing right before dinner. Thirdly, I like making this salad for all the patriotic American holidays. This is the perfect salad to serve for the Fourth of July. And, lastly, we all love the creamy feta, juicy watermelon, and sweet blueberries in this salad.

The Equipment I Used

  • A Salad Spinner- Use this to dry your arugula. If the arugula is wet, the dressing won’t cling to it.
  • A Small Jar- I use this to mix together my vinaigrette.

The Ingredients I Used for Watermelon Feta and Blueberry Salad

  • Feta- Use a good quality feta cheese. My favorite is the French feta cheese that comes in brine at the cheese shop.
  • Arugula- Buy baby arugula. I like the Earthbound Farms brand.
  • Watermelon- Use seedless watermelon. If you want to cut out stars, first cut your watermelon into thin slices.
  • Lemon- Use fresh lemon juice for the vinaigrette.
  • Olive Oil- Be sure to use a good quality extra virgin olive oil.

How I Made my Salad

  • First, mixed together all the vinaigrette ingredients.
  • Next, I sliced my watermelon thinly and cut out watermelon stars.
  • Then, I tossed together all the ingredients in a big bowl.

Ingredients
  

  • 4 cups baby arugula
  • 2 cups watermelon cubes
  • 1 cup blueberries
  • ½ cup feta cheese, crumbled

For the Lemon Vinaigrette:

  • ¼ cup extra virgin olive oil
  • 2 tbsp. lemon juice
  • 1 tsp. honey
  • tsp. kosher salt and black pepper

Instructions
 

  • Begin by making the Lemon Vinaigrette: Simply shake all the ingredients together in a small jar.
  • Then, toss together the arugula, watermelon, blueberries, and feta cheese. Add as much vinaigrette as you like and toss some more.

Strawberry and Avocado Salad with Feta and Pecans

Strawberry and Avocado Salad with Feta and Pecans is one of our favorite June salads. Finally, my farm markets are full of fresh berries, and they are some of my favorite ingredients to cook with. I love this salad for several reasons. First of all, I can make this whole salad in fifteen minutes. Secondly, I can make this salad hours ahead of time. And, thirdly, the Strawberry Vinaigrette is really sweet and delicious.

The Equipment I Used

  • A Food Processor- You’ll need this to puree the strawberries and mix them with the vinaigrette ingredients.
  • A Salad Spinner- This makes cleaning your greens so much easier.
  • A Big Bowl- Use this to toss everything together.

The Ingredients Needed for Strawberry and Avocado Salad with Feta and Pecans

  • Spring Greens- I used prewashed Spring Greens, but I always rewash them.
  • Strawberries- Be sure and wash these well, in several changes of cold water.
  • Avocado- I like to ripen these on the counter and then store them in the refrigerator.
  • Feta- Try and buy feta in brine. My favorite is the French feta.
  • Pecans- You could toast them for extra crisp, by toasting them in a skillet on low heat for five minutes.
  • Oil- Use extra virgin olive oil. I like California Olive Ranch brand olive oil.
  • Vinegar- I used rice wine vinegar, because it’s nice and mild.
  • Honey- This adds a lot of sweetness to the vinaigrette.

How I Made my Salad

  • First, I made the Strawberry Vinaigrette. It’s important to make sure the food processor thoroughly purees the strawberries and combines it with the vinegar and oil. If you feel it’s not sweet enough, just add some more honey.
  • Next, I combined the lettuce with the strawberries, avocado, feta, and pecans.
  • Finally, I added in the vinaigrette and tossed everything together. Be sure and use a big bowl for this.

  • 3 tbsp. rice wine vinegar
  • 1 tbsp. honey
  • ¼ cup chopped strawberries

  • Begin by making the Strawberry Vinaigrette: Blend all the ingredients together in he food processor until the strawberries are crushed and everything is well blended.
  • Toss all the ingredients together in a bowl and then add as much dressing as you like and toss some more.

Fried Goat Cheese Salad with Honey Mustard Dressing

Fried Goat Cheese Salad with Honey Mustard Dressing is a cheesy and delicious tossed salad. It’s a popular restaurant dish, but it’s very easy to make at home. I start the salad by rolling my goat cheese in pretzel crumbs. For best results, it’s good to freeze the goat cheese medallions for twenty minutes. But, if you’re in a hurry, you can skip this step. The crumbs just won’t adhere as well. Next, I toss together spring greens, cucumbers, cherry tomatoes, prosciutto, and red onions. Then, I dress the vegetables with a Honey Mustard Dressing. Next, I fry the goat cheese medallions in a bit of olive oil. Finally, I top the salad with the goat cheese medallions, which are crispy on the outside, and melted in the middle.

The Equipment I Used for my Salad

  • A Food Processor- You will need a food processor, to finely chop the pretzels.
  • A Salad Spinner- In order to get nice dry lettuce, I use a salad spinner to dry my lettuce.
  • A Nonstick Skillet- I fry my goat cheese in a nonstick skillet.
  • A Small Jar- Use a jar to shake up your salad dressing.

The Ingredients Needed for Fried Goat Cheese Salad with Honey Mustard Dressing

  • Pretzels- I used mini pretzel sticks to coat my goat cheese.
  • Goat Cheese- Use plain, unflavored goat cheese for this recipe.
  • Oil- Be sure and use a nice and mild extra virgin olive oil. I like California Olive Ranch olive oil.
  • Prosciutto- This adds a nice salty element to the salad.

How I Made My Salad

  • First, I rolled the goat cheese in oil and then pretzel crumbs.
  • Next, I chilled the goat cheese for twenty minutes. However, if you’re in a hurry, it’s fine to skip this step. Just know some of the crumbs may fall off when you fry the cheese.
  • Then, I fry the goat cheese, just until it heats through.
  • Finally, I toss together all the veggies and the dressing and top it with the goat cheese.

My family really loves this Fried Goat Cheese Salad with Honey Mustard Dressing. It’s easy enough for every day, but fancy enough for company. And, it’s such a nice change from basic green salads.

Ingredients
  

  • 1 cup pretzels, finely crushed in a food processor
  • 4 ounces goat cheese
  • 3 tbsp. extra virgin olive oil
  • 4 cups Spring greens
  • 1 cup halved cherry tomatoes
  • 4 slices prosciutto
  • 1 cup sliced cucumbers
  • ½ cup sliced red onions

For the Honey Mustard Dressing:

  • ½ cup extra virgin olive oil
  • 3 tbsp. apple cider vinegar
  • 2 tbsp. honey
  • 1 tsp. Dijon mustard

Instructions
 

  • Shape the goat cheese into four discs. Dip each disc into two tablespoons of the oil, and then roll it around in the crushed pretzels, until the cheese is completely covered in the crumbs.
  • Place the coated goat cheese discs on a wax paper covered plate. Place the plate in the freezer for twenty minutes.
  • Meanwhile, divide all the other salad ingredients between four plates. And, combine all the Honey Mustard Dressing ingredients in a jar and shake it up to combine.
  • After twenty minutes, heat the rest of the oil in a nonstick skillet on low heat, and cook the goat cheese discs for one minute on each side. The cheese should be just starting to get soft in the center.
  • Place a goat cheese on each salad, and drizzle with as much dressing as you like.
