The Equipment I Used
A Salad Spinner- Use this to dry your arugula. If the arugula is wet, the dressing won’t cling to it.

I love this salad for several reasons. First of all, I can make this whole salad in fifteen minutes. Secondly, I can make this salad hours ahead of time. And, thirdly, the Strawberry Vinaigrette is really sweet and delicious.
The Equipment I Used
A Food Processor- You’ll need this to puree the strawberries and mix them with the vinaigrette ingredients.
A Salad Spinner- This makes cleaning your greens so much easier.
A Big Bowl- Use this to toss everything together.
The Ingredients Needed for Strawberry and Avocado Salad with Feta and Pecans
Spring Greens- I used prewashed Spring Greens, but I always rewash them.
Strawberries- Be sure and wash these well, in several changes of cold water.
Avocado- I like to ripen these on the counter and then store them in the refrigerator.
Feta- Try and buy feta in brine. My favorite is the French feta.
Pecans- You could toast them for extra crisp, by toasting them in a skillet on low heat for five minutes.
Oil- Use extra virgin olive oil. I like California Olive Ranch brand olive oil.
Vinegar- I used rice wine vinegar, because it’s nice and mild.
Honey- This adds a lot of sweetness to the vinaigrette.
How I Made my Salad
First, I made the Strawberry Vinaigrette. It’s important to make sure the food processor thoroughly purees the strawberries and combines it with the vinegar and oil. If you feel it’s not sweet enough, just add some more honey.
Next, I combined the lettuce with the strawberries, avocado, feta, and pecans.
Finally, I added in the vinaigrette and tossed everything together. Be sure and use a big bowl for this.

Begin by making the Strawberry Vinaigrette: Blend all the ingredients together in he food processor until the strawberries are crushed and everything is well blended.

Fried Goat Cheese Salad with Honey Mustard Dressing is a cheesy and delicious tossed salad. It’s a popular restaurant dish, but it’s very easy to make at home. I start the salad by rolling my goat cheese in pretzel crumbs. For best results, it’s good to freeze the goat cheese medallions for twenty minutes. But, if you’re in a hurry, you can skip this step. The crumbs just won’t adhere as well. Next, I toss together spring greens, cucumbers, cherry tomatoes, prosciutto, and red onions. Then, I dress the vegetables with a Honey Mustard Dressing. Next, I fry the goat cheese medallions in a bit of olive oil. Finally, I top the salad with the goat cheese medallions, which are crispy on the outside, and melted in the middle.

A Food Processor- You will need a food processor, to finely chop the pretzels.
A Salad Spinner- In order to get nice dry lettuce, I use a salad spinner to dry my lettuce.
A Nonstick Skillet- I fry my goat cheese in a nonstick skillet.
A Small Jar- Use a jar to shake up your salad dressing.
The Ingredients Needed for Fried Goat Cheese Salad with Honey Mustard Dressing
Pretzels- I used mini pretzel sticks to coat my goat cheese.
Goat Cheese- Use plain, unflavored goat cheese for this recipe.
Oil- Be sure and use a nice and mild extra virgin olive oil. I like California Olive Ranch olive oil.
Prosciutto- This adds a nice salty element to the salad.
How I Made My Salad
First, I rolled the goat cheese in oil and then pretzel crumbs.
Next, I chilled the goat cheese for twenty minutes. However, if you’re in a hurry, it’s fine to skip this step. Just know some of the crumbs may fall off when you fry the cheese.
Then, I fry the goat cheese, just until it heats through.
Finally, I toss together all the veggies and the dressing and top it with the goat cheese.
My family really loves this Fried Goat Cheese Salad with Honey Mustard Dressing. It’s easy enough for every day, but fancy enough for company. And, it’s such a nice change from basic green salads.
Fried Goat Cheese Salad with Honey Mustard Dressing
Spring greens topped with cucumbers, tomatoes, red onions, prosciutto, and pretzel crusted fried goat cheese. All tossed with Honey Mustard Dressing.
Shape the goat cheese into four discs. Dip each disc into two tablespoons of the oil, and then roll it around in the crushed pretzels, until the cheese is completely covered in the crumbs.
Place the coated goat cheese discs on a wax paper covered plate. Place the plate in the freezer for twenty minutes.
Meanwhile, divide all the other salad ingredients between four plates. And, combine all the Honey Mustard Dressing ingredients in a jar and shake it up to combine.
After twenty minutes, heat the rest of the oil in a nonstick skillet on low heat, and cook the goat cheese discs for one minute on each side. The cheese should be just starting to get soft in the center.
Place a goat cheese on each salad, and drizzle with as much dressing as you like.
